Veggie burgers have been around since the early 1980s and have gained popularity as a delicious and healthy alternative to traditional meat burgers.

Preheat the oven to 400°F (200°C).

Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for about 45 minutes, or until tender.

In the meantime, cook the brown rice according to package instructions.

Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic cloves. Cook until translucent.

In a large bowl, combine the cooked sweet potatoes, black beans, cooked brown rice, cooked onion and garlic mixture, smoked paprika, cumin, coriander, salt, black pepper, and bread crumbs. Mix well.

Form the mixture into patties and place them on a baking sheet. Bake for 20 minutes, flipping halfway through.

Toast the burger buns if desired.

Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a veggie patty, tomato slices, red onion slices, and a dollop of curry cilantro mayo.
