  1. Cook the quinoa according to package instructions. Drain and set aside.
  2. In a large bowl, mash the black beans with a fork until mostly smooth.
  3. Finely chop the red onion and mince the garlic cloves.
  4. Add the cooked quinoa, red onion, garlic, smoked paprika, hickory liquid smoke, ground cumin, breadcrumbs, salt, and black pepper to the bowl with the mashed black beans. Mix well to combine.
  5. Shape the mixture into 4 patties.
  6. Heat olive oil in a pan over medium heat. Cook the patties for 4-5 minutes on each side, until crispy and heated through.
  7. Toast the burger buns.
  8. Assemble the burgers by placing a lettuce leaf, tomato slice, avocado slice, and a quinoa and black bean patty on each bun.
  9. Serve the burgers with your favorite condiments and enjoy!
