Rinse the pinto beans and soak them overnight.

Drain the beans and transfer them to a slow cooker.

Add the chopped onion, minced garlic, tomato paste, brown sugar, molasses, Dijon mustard, Worcestershire sauce, liquid smoke, salt, black pepper, and water to the slow cooker.

Stir well to combine all the ingredients.

Cover the slow cooker and cook on low heat for 6 hours.

After 6 hours, remove the lid and stir the beans.

Continue cooking on low heat for another 2 hours.

Once the beans are tender and the flavors have melded together, remove from heat.

Let the beans rest for 10 minutes before serving.
