  1. Wash and scrub the potatoes. Leave the skin on and cut them into small cubes.
  2. Finely chop the onion and garlic.
  3. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  4. Add the potato cubes to the pot and stir well.
  5. Pour in the vegetable stock and bring to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  6. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh herbs.
