Wash and dry the kale leaves. Remove the tough stems and chop the leaves into bite-sized pieces.

In a large bowl, combine the kale, sun-dried tomatoes, red onion, feta cheese, and pine nuts.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the salad and toss to coat evenly.
