  2. Add curry powder, turmeric powder, cumin powder, coriander powder, salt, and black pepper. Stir well.
  3. Add diced courgette and sweet potato. Stir and cook for 5 minutes.
  4. Pour in vegetable stock and coconut milk. Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.
  5. While the stew is simmering, prepare the spicy tofu. Cut tofu into cubes and toss with a mixture of curry powder, turmeric powder, cumin powder, coriander powder, salt, and black pepper. Heat olive oil in a frying pan over medium heat. Add tofu cubes and cook until crispy and golden brown.
  6. Serve the stew in bowls, topped with the spicy tofu. Garnish with fresh coriander and lime wedges.
