Wash and soak the basmati rice in water for 30 minutes.

Heat oil in a pot and add sliced onions. Saute until golden brown.

Add ginger-garlic paste and saute for a minute.

Add chopped tomatoes and cook until they turn mushy.

Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well.

Add bitter gourd slices and cook for 5 minutes.

Drain the soaked rice and add it to the pot. Mix well.

Add water and bring it to a boil. Reduce the heat, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked.

Remove from heat and let it rest for 10 minutes.

Fluff the rice with a fork and serve hot.
