Cut the tofu, mushrooms, carrots, bell peppers, broccoli, snow peas, and baby corn into bite-sized pieces.

Heat sesame oil in a pot and sauté garlic and ginger until fragrant.

Add the tofu, mushrooms, carrots, bell peppers, broccoli, snow peas, and baby corn to the pot and stir-fry for 2-3 minutes.

In a separate bowl, mix soy sauce, vegetable stock, cornstarch, and water.

Pour the mixture into the pot and bring it to a boil. Reduce heat and simmer for 5 minutes.

Season with salt to taste.

Serve the hot pot with steamed rice or noodles.
