  3. Heat vegetable oil in a pan over medium heat.
  4. Add the shiitake mushrooms and stir-fry for 2 minutes.
  5. Pour the gochujang mixture over the mushrooms and continue to stir-fry for another 3-4 minutes until the mushrooms are cooked through.
  6. Garnish with sliced scallions and toasted sesame seeds.
  7. Let it rest for 5 minutes before serving.
  8. Serve hot as a side dish or appetizer.
