Clean the shiitake mushrooms and remove the stems.

In a bowl, mix together the gochujang paste, soy sauce, minced garlic, and sesame oil.

Heat vegetable oil in a pan over medium heat.

Add the shiitake mushrooms and stir-fry for 2 minutes.

Pour the gochujang mixture over the mushrooms and continue to stir-fry for another 3-4 minutes until the mushrooms are cooked through.

Garnish with sliced scallions and toasted sesame seeds.
