Rinse the lentils thoroughly and soak them in water for 30 minutes.

Peel and dice the potatoes into small cubes.

Heat oil in a pan and add cumin seeds.

Once the seeds crackle, add finely chopped onions, garlic, and ginger. Sauté until golden brown.

Add chopped tomatoes and cook until they turn soft.

Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Stir well.

Add the diced potatoes and soaked lentils. Mix everything together.

Pour water and bring it to a boil. Reduce the heat and let it simmer for 20-25 minutes or until the lentils and potatoes are cooked.

Sprinkle garam masala and garnish with fresh coriander leaves.

Allow the dish to rest for 10 minutes before serving.
