Wash and peel the potatoes. Cut them into small cubes.

Peel the shallots and cut them into halves.

In a large bowl, toss the potatoes and shallots with olive oil, salt, and black pepper.

Spread the mixture evenly on a baking sheet.

Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.
