Seitan Roast With Shitakes and Leeks (Vegan)
Seitan, also known as wheat meat or wheat gluten, is a popular meat substitute in vegan and vegetarian cooking. It has a meaty texture and is made by washing wheat flour dough to remove the starch, leaving behind the gluten protein.

Preheat the oven to 180°C (350°F).

In a large skillet, heat olive oil over medium heat. Add garlic, leeks, and shitake mushrooms. Sauté for 5 minutes until the vegetables are softened.

In a mixing bowl, combine seitan, sautéed vegetables, soy sauce, thyme, rosemary, salt, and black pepper. Mix well.

Transfer the mixture to a greased baking dish. Press it down to form a roast shape.

Bake in the preheated oven for 45-50 minutes.

Remove from the oven and let it rest for 10 minutes before slicing.
