Seitan, also known as wheat meat or wheat gluten, is a popular meat substitute in vegetarian and vegan cuisine. It is made from gluten, the protein found in wheat, and has a chewy texture similar to meat.

Preheat the oven to 350°F (175°C).

In a large mixing bowl, combine vital wheat gluten, nutritional yeast, garlic powder, onion powder, and paprika.

In a separate bowl, mix soy sauce, vegetable broth, olive oil, and liquid smoke.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Knead the mixture for about 5 minutes until it forms a dough-like consistency.

Shape the dough into a log shape and wrap it tightly in aluminum foil.

Place the wrapped seitan log on a baking sheet and bake for 60 minutes.

Remove from the oven and let it rest for 30 minutes.

Unwrap the seitan log and slice it into desired portions.
