  1. Rinse the red quinoa under cold water and cook according to package instructions.
  2. While the quinoa is cooking, remove the stems from the Tuscan kale and chop the leaves into bite-sized pieces.
  3. Heat olive oil in a large pan over medium heat. Add the chopped red onion and minced garlic, and sauté until softened.
  4. Add the kale to the pan and sauté until wilted.
  5. Cut the cherry tomatoes in half and add them to the pan. Cook for a few minutes until they start to soften.
  6. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to make a dressing.
  7. Once the quinoa is cooked, fluff it with a fork and add it to the pan with the kale and tomatoes. Pour the dressing over the mixture and stir well to combine.
  8. Allow the flavors to meld for a few minutes off the heat. Serve warm or at room temperature.
