  1. In a mixing bowl, combine vital wheat gluten, nutritional yeast, garlic powder, onion powder, and paprika.
  2. In a separate bowl, mix vegetable broth, soy sauce, liquid smoke, olive oil, cornstarch, and water.
  3. Pour the wet mixture into the dry mixture and stir until well combined.
  4. Knead the dough for about 5 minutes until it becomes elastic.
  5. Shape the dough into a log and wrap it tightly in aluminum foil.
  6. Preheat the oven to 350°F (180°C) and bake the seitan log for 40 minutes.
  7. Remove the foil and brush the log with some olive oil.
  8. Grill the log for 5 minutes on each side to get a nice char.
  9. Let the seitan log rest for 10 minutes before slicing and serving.
