Tofu, also known as bean curd, is a popular protein source in vegetarian and vegan diets. It is made by coagulating soy milk and pressing the resulting curds into soft white blocks.

  1. Press the tofu to remove excess moisture and crumble it.
  2. Chop the bell pepper, onion, mushrooms, and green onions.
  3. Heat olive oil in a pan.
  4. Add the onions and bell pepper and sauté until slightly softened.
  5. Add mushrooms and stir-fry for a few minutes.
  6. Add crumbled tofu, turmeric powder, salt, and black pepper.
  7. Cook for another 5 minutes, stirring occasionally.
  8. Add spinach and cook until wilted.
  9. Garnish with chopped green onions.
  10. Serve hot and enjoy!
