Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook until onion is translucent.

Add carrots and cook for 5 minutes.

Stir in red curry paste and cook for another minute.

Add coconut milk, vegetable broth, and salt. Bring to a boil, then reduce heat and simmer for 20 minutes.

Use an immersion blender to blend the soup until smooth.

Stir in lime juice.

Serve the soup hot, garnished with cilantro and chopped red chili pepper to taste.
