Savior Muffins
Muffins were originally called ‘muffin cakes’ and were baked in individual clay molds.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.

In a small bowl, combine the flaxseed meal and water. Set aside for 5 minutes to thicken.

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate bowl, mash the bananas until smooth. Add the maple syrup, vanilla extract, flaxseed mixture, and applesauce. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated carrots, walnuts, and raisins.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 10 minutes. Then transfer to a wire rack to cool completely.
