  2. Slice the eggplant, zucchini, red bell pepper, and yellow bell pepper into thin rounds.
  3. Chop the onion and mince the garlic cloves.
  4. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  5. Add the sliced vegetables to the skillet and cook for 5 minutes, stirring occasionally.
  6. Stir in Dijon mustard, fresh thyme, salt, and black pepper.
  7. Transfer the mixture to a baking dish and bake for 30 minutes.
  8. Remove from the oven and let it rest for 10 minutes.
  9. Garnish with fresh basil before serving.
