Dijon Ratatouille
Ratatouille is a traditional French Provençal stewed vegetable dish originating in Nice.

Preheat the oven to 400°F (200°C).

Slice the eggplant, zucchini, red bell pepper, and yellow bell pepper into thin rounds.

Chop the onion and mince the garlic cloves.

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

Add the sliced vegetables to the skillet and cook for 5 minutes, stirring occasionally.

Stir in Dijon mustard, fresh thyme, salt, and black pepper.

Transfer the mixture to a baking dish and bake for 30 minutes.

Remove from the oven and let it rest for 10 minutes.

Garnish with fresh basil before serving.
