Soak the red kidney beans in water overnight.

Drain and rinse the beans.

In a large pot, heat olive oil over medium heat.

Add chopped onion, minced garlic, and diced carrot. Cook until onion is translucent.

Add diced bell pepper, tomato paste, paprika, cayenne pepper, bay leaves, salt, and black pepper. Stir well.

Add soaked and rinsed red kidney beans to the pot.

Pour enough water to cover the beans by 2 inches.

Bring to a boil, then reduce heat to low and simmer for about 1 hour or until the beans are tender.

Remove from heat and let it rest for 10 minutes.

Garnish with fresh parsley and serve with sour cream if desired.
