Preheat the oven to 400°F (200°C).

Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 30-35 minutes until the tomatoes are soft and slightly browned.

In a large pot, heat olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Add the roasted tomatoes and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes.

Remove the pot from heat and let the soup cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth.

Return the soup to the pot and stir in the fresh basil leaves. Season with salt and pepper to taste.

Stir in the heavy cream and cook for an additional 5 minutes until heated through.

Serve the soup hot, garnished with fresh basil leaves.
