Roasted Tomato Sauce
Tomatoes were first cultivated by the Aztecs and Incas and were brought to Europe by Spanish explorers in the 16th century.
This is vegan, gluten free and low carb recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the oven to 400°F (200°C).

Cut the tomatoes in half and place them on a baking sheet.

Drizzle the tomatoes with olive oil and sprinkle with salt and black pepper.

Roast the tomatoes in the oven for 30-40 minutes, until they are soft and slightly charred.

In a saucepan, heat olive oil over medium heat.

Add minced garlic and chopped onion to the saucepan and sauté until they are soft and translucent.

Remove the roasted tomatoes from the oven and let them cool slightly.

Peel off the skin of the tomatoes and discard.

Add the roasted tomatoes, basil, oregano, and salt to the saucepan.

Simmer the sauce for 10 minutes, stirring occasionally.

Use a blender or immersion blender to puree the sauce until smooth.

Let the sauce rest for 5 minutes before serving.

Serve the roasted tomato sauce over pasta, pizza, or as a dipping sauce.
