  2. Peel and chop the sweet potatoes into small cubes.
  3. Toss the sweet potatoes and garlic cloves with olive oil, salt, and black pepper.
  4. Spread them on a baking sheet and roast for 30-35 minutes, or until tender and slightly caramelized.
  5. In a large pot, sauté the onion until translucent.
  6. Add the roasted sweet potatoes and garlic cloves to the pot.
  7. Pour in the vegetable broth and bring to a boil.
  8. Reduce heat and simmer for 10 minutes.
