Preheat the oven to 400°F (200°C).

Peel and chop the sweet potatoes into small cubes.

Toss the sweet potatoes and garlic cloves with olive oil, salt, and black pepper.

Spread them on a baking sheet and roast for 30-35 minutes, or until tender and slightly caramelized.

In a large pot, sauté the onion until translucent.

Add the roasted sweet potatoes and garlic cloves to the pot.

Pour in the vegetable broth and bring to a boil.

Reduce heat and simmer for 10 minutes.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Stir in the coconut milk and season with additional salt and pepper if needed.

Simmer for another 5 minutes.
