Roasted spiced Cauliflower
Cauliflower is a cruciferous vegetable and is rich in vitamins and minerals, including vitamin C and vitamin K.

Preheat the oven to 425°F (220°C).

Cut the cauliflower into florets.

In a large bowl, combine olive oil, paprika, cumin, coriander, garlic powder, salt, and black pepper.

Add the cauliflower florets to the bowl and toss until evenly coated with the spice mixture.

Transfer the cauliflower to a baking sheet and spread it out in a single layer.

Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and lightly browned.

Remove from the oven and let it rest for 5 minutes.

Garnish with fresh parsley and serve with lemon wedges.
