  1. Preheat the oven to 400°F (200°C).
  2. Cut the red bell peppers in half and remove the seeds and stems.
  3. Place the bell peppers on a baking sheet, cut side down, and roast in the oven for about 20 minutes until the skins are charred.
  4. Remove the bell peppers from the oven and let them cool. Once cooled, peel off the charred skins and chop the peppers into small pieces.
  5. In a large saucepan, bring 2 cups of water to a boil. Add the cracked wheat and cook according to package instructions.
  6. In a separate pan, heat the olive oil over medium heat. Add the chopped red onion and garlic cloves, and sauté until they are softened.
  7. Add the chopped spinach to the pan and cook until wilted.
  8. In a large bowl, combine the cooked cracked wheat, roasted red peppers, sautéed spinach mixture, lemon juice, salt, and black pepper. Mix well.
  9. Let the mixture rest for 10 minutes to allow the flavors to meld together.
