Red lentils are a great source of plant-based protein and are rich in fiber, making them a nutritious addition to any meal.

Preheat the oven to 400°F (200°C).

Rinse the red lentils under cold water and drain.

In a large pot, heat the olive oil over medium heat.

Add the onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.

Stir in the cumin, paprika, salt, and black pepper.

Add the red lentils, vegetable broth, and tomato paste. Bring to a boil.

Reduce the heat and simmer for 20 minutes, or until the lentils are tender.

Meanwhile, spread the red lentils on a baking sheet and roast in the preheated oven for 10 minutes, or until crispy.

Remove the lentils from the oven and let them cool.

Once the lentils are cool, blend them in a food processor until fine.

Return the blended lentils to the pot and stir well.

Cook for an additional 5 minutes.

Stir in the fresh parsley and lemon juice.
