  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squash in half and remove the seeds. Slice each half into 1-inch thick slices.
  3. In a small bowl, whisk together the balsamic vinegar, maple syrup, olive oil, salt, black pepper, and fresh thyme.
  4. Place the acorn squash slices in a single layer on a baking sheet lined with parchment paper.
  5. Brush the balsamic-maple mixture over the squash slices, making sure to coat both sides.
  6. Roast in the preheated oven for 30-40 minutes, or until the squash is tender and caramelized, flipping halfway through.
