Peel and dice the butternut squash.

Chop the onion and garlic cloves.

Heat olive oil in a large pot and sauté the onion and garlic until translucent.

Add the diced butternut squash and vegetable stock to the pot.

Bring to a boil and then reduce the heat to a simmer. Cook for about 20 minutes or until the butternut squash is tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the coconut milk.

Season with salt and black pepper to taste.

Simmer for another 5 minutes to allow the flavors to blend.
