Yams are often mistaken for sweet potatoes, but they are actually two different vegetables. Yams have a rough, scaly skin and are starchier than sweet potatoes.

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the yams, then cut them into chunks.
  3. Place the yam chunks on a baking sheet and drizzle with olive oil. Sprinkle with salt and black pepper.
  4. Cut the top off each garlic clove and place them on the baking sheet with the yams.
  5. Roast in the preheated oven for 30-35 minutes, or until the yams are tender.
  6. Remove from the oven and let cool slightly.
  7. Squeeze the roasted garlic cloves out of their skins and set aside.
  8. In a large bowl, add the roasted yams and garlic cloves. Mash them together using a potato masher or fork.
  9. Gradually add almond milk while mashing until desired consistency is reached.
  10. Season with additional salt and black pepper to taste.
  11. Garnish with fresh parsley before serving.
