  1. Preheat the oven to 400°F (200°C).
  2. Cut the cauliflower into florets and place them on a baking sheet.
  3. Drizzle the cauliflower with olive oil, sprinkle with salt and black pepper, and toss to coat.
  4. Wrap the garlic cloves in foil and place them on the same baking sheet.
  5. Roast the cauliflower and garlic in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown.
  6. Remove the garlic cloves from the foil and mash them with a fork.
  7. Transfer the roasted cauliflower and mashed garlic to a large bowl.
  8. Add almond milk to the bowl and mash the mixture with a potato masher until smooth and creamy.
  9. Season with additional salt and black pepper to taste.
  10. Serve the roasted garlic and cauliflower mash garnished with fresh parsley.
