Cut the cauliflower into florets.

In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.

Spread the cauliflower on a baking sheet and roast for 20-25 minutes, or until golden brown.

In a small pan, toast the walnuts over medium heat for 3-4 minutes.

In the same pan, add the raisins and cook for 1-2 minutes until they plump up.
