Preheat the oven to 400°F (200°C).

Wrap the beets in aluminum foil and roast them for 40 minutes or until tender.

Once roasted, let the beets cool, then peel and chop them.

In a food processor, combine the roasted beets, chickpeas, tahini, garlic, lemon juice, olive oil, salt, and cumin. Blend until smooth and creamy.

In a small bowl, mix the Greek yogurt with lemon juice and salt.

Serve the roasted beet hummus with a dollop of lemony yogurt on top.

Sprinkle with paprika and fresh parsley for garnish.
