  3. Shape the mixture into patties and place them on a baking sheet lined with parchment paper.
  4. Bake for 20 minutes, then flip the patties and bake for an additional 10 minutes.
  5. While the patties are baking, heat olive oil in a skillet over medium heat. Add kale leaves and cook until crispy, about 5 minutes.
  6. In a small bowl, whisk together tahini, lemon juice, fresh thyme leaves, and water until smooth and creamy.
  7. Toast the burger buns if desired.
  8. Assemble the burgers by placing a beet patty on each bun, topping with crispy kale, and drizzling with the creamy thyme tahini sauce. Add optional toppings if desired.
