Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast for 40 minutes, or until tender. Let them cool, then peel and slice. In a small bowl, whisk together balsamic vinegar, olive oil, salt, and black pepper. In a serving plate, layer the mixed greens, sliced beets, avocado, Granny Smith apples, crumbled goat cheese, and walnuts. Drizzle the dressing over the tower. Let it rest for 10 minutes before serving. Enjoy!
