Preheat the oven to 400°F (200°C).

Cut the acorn squash in half and remove the seeds.

Brush the inside of each squash half with olive oil and maple syrup.

Sprinkle with salt and black pepper.

Place the squash halves on a baking sheet, cut side down.

Roast in the preheated oven for 30-40 minutes, or until the squash is tender.

Remove from the oven and let it rest for 5 minutes.
