Rinse the lentils under cold water and set aside.

Heat olive oil in a large pot over medium heat.

Add onion, carrot, celery, and garlic. Sauté until vegetables are tender.

Add tomato paste, paprika, cumin, bay leaf, salt, and black pepper. Stir well.

Add lentils and vegetable broth. Bring to a boil.

Reduce heat to low and simmer for 25-30 minutes, or until lentils are cooked.

Remove bay leaf and garnish with fresh parsley.
