  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour, sugar, and salt. Cut in the vegetable shortening until the mixture resembles coarse crumbs.
  3. Gradually add the cold water, a tablespoon at a time, until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. While the dough is chilling, rinse the grapes and remove the stems. In a separate bowl, combine the grapes, cornstarch, lemon juice, vanilla extract, cinnamon, and nutmeg. Stir until the grapes are well coated.
  5. Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Place the dough in the dish and trim any excess.
  6. Pour the grape mixture into the pie crust. Sprinkle with turbinado sugar.
  7. Bake for 45 minutes, or until the crust is golden brown and the grape filling is bubbly.
  8. Remove from the oven and let it rest for at least 1 hour before serving.
