Rice and Peas

Rice and Peas is a traditional Jamaican dish often served with jerk chicken or other Caribbean meats.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Rinse the rice and set aside.

In a large pot, combine the coconut milk, water, scallions, thyme, garlic, salt, black pepper, and Scotch bonnet pepper.

Bring the mixture to a boil, then reduce heat to low and let it simmer for 5 minutes.

Add the rice and kidney beans to the pot and stir well.

Cover the pot and let it cook for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.

Remove from heat and let it rest for 5 minutes before fluffing the rice with a fork.
