In a large saucepan, heat olive oil over medium heat. Add the chopped onion and minced garlic cloves. Cook until the onion becomes translucent.

Add the rinsed rice and dried cranberries to the saucepan. Cook for 2 minutes, stirring constantly.

Pour in the vegetable broth and season with salt and black pepper. Bring to a boil.

Reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
