  2. In a food processor, blend tofu, reduced fat cream cheese, honey, lemon juice, vanilla extract, and cornstarch until smooth.
  3. In a separate bowl, mix graham cracker crumbs and melted unsalted butter. Press the mixture into the bottom of a greased 9-inch springform pan.
  4. Pour the tofu mixture over the crust and smooth the top.
  5. Bake for 40 minutes or until the edges are set and the center is slightly jiggly.
  6. Turn off the oven and leave the cheesecake inside for 15 minutes.
  7. Remove from the oven and let it cool completely.
  8. Chill in the refrigerator for at least 2 hours or overnight.
  9. Serve chilled with fresh berries on top.
