This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

  1. Preheat the oven to 350°F (175°C).
  2. Grate the carrots and set aside.
  3. In a large bowl, mix together the whole wheat flour, almond flour, baking powder, ground cinnamon, and stevia.
  4. In a separate bowl, beat the eggs. Add the grated carrots, unsweetened applesauce, coconut oil, and vanilla extract. Mix well.
  5. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the chopped walnuts and raisins.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
