Red Rice Pilaf
Red rice is a whole grain rice that gets its color from anthocyanins, which are antioxidants found in the bran layer of the rice.

Rinse the red rice under cold water.

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic, sauté until fragrant.

Add diced carrot and red bell pepper, cook for 5 minutes.

Stir in cumin powder, paprika, salt, and black pepper.

Add red rice and vegetable broth, bring to a boil.

Reduce heat, cover, and simmer for 25 minutes or until rice is tender.

Stir in frozen peas and cook for an additional 5 minutes.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and garnish with fresh parsley.
