  6. Add red rice and vegetable broth, bring to a boil.
  7. Reduce heat, cover, and simmer for 25 minutes or until rice is tender.
  8. Stir in frozen peas and cook for an additional 5 minutes.
  9. Remove from heat and let it rest for 5 minutes.
  10. Fluff the rice with a fork and garnish with fresh parsley.
