Blanch the cabbage leaves in boiling water for 2 minutes. Remove and set aside.

In a pan, sauté the carrots, mushrooms, tofu, garlic, and ginger for 5 minutes.

Add soy sauce and sesame oil to the pan and cook for another 2 minutes.

Take a cabbage leaf and place a spoonful of the sautéed mixture in the center. Fold the sides of the leaf over the filling and roll it up like a parcel.

Repeat with the remaining cabbage leaves and filling.

In a large pot, bring the vegetable broth to a boil. Add the cabbage parcels and simmer for 20 minutes.
