Rinse the red lentils under cold water.

In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrot, and sliced celery stalks. Cook until vegetables are tender.

Add rinsed lentils, vegetable broth, ground cumin, ground paprika, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for about 25 minutes or until lentils are cooked.

Remove the pot from heat and stir in lemon juice.

Serve the soup hot, garnished with fresh cilantro.
