Heat cooking oil in a large pan and sauté the onion, garlic, and ginger until fragrant.

Add the curry powder, cumin powder, and turmeric powder to the pan and cook for another minute.

Add the red lentils, tofu, coconut milk, and vegetable broth to the pan. Bring to a boil, then reduce heat and simmer for 20 minutes or until the lentils are cooked through.

Stir in lime juice and salt.

Serve the curry over rice or with naan bread.
