Red cauliflower gets its vibrant color from anthocyanins, which are also found in red cabbage and red wine.

Preheat the oven to 425°F (220°C).

Cut the red cauliflower into small florets.

In a large bowl, toss the cauliflower florets with olive oil, minced garlic, paprika, salt, and black pepper.

Spread the seasoned cauliflower evenly on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and lightly browned.

Remove from the oven and let it rest for 5 minutes.

Garnish with fresh parsley before serving.
