Soak the red beans overnight in water.

Drain and rinse the beans.

In a large pot, sauté the onion, garlic, bell pepper, and celery until softened.

Add the smoked sausage, bay leaves, thyme, salt, black pepper, and cayenne pepper.

Stir in the soaked red beans and cover with water.

Bring to a boil, then reduce heat and simmer for about 2 hours or until the beans are tender.
