  1. In a dry frying pan, toast the cumin seeds, coriander seeds, cardamom pods, cinnamon stick, ginger powder, turmeric powder, black pepper, nutmeg, paprika, cayenne pepper, and cloves until fragrant.
  2. Transfer the toasted spices to a spice grinder or mortar and pestle and grind until fine.
  3. In a bowl, combine the ground spices with salt, cilantro leaves, garlic cloves, lemon juice, and olive oil to make a paste.
  4. Spread the paste evenly on the meat and let it marinate for at least 30 minutes.
  5. Heat a grill or pan over medium-high heat and cook the marinated meat until cooked through.
  6. Let the meat rest for 5 minutes before slicing.
  7. Serve the sliced meat with your choice of sides.
