In a large pot, combine the rice, beans, coconut milk, water, onion, garlic, thyme, and Scotch bonnet pepper.

Bring to a boil, then reduce heat to low and cover the pot.

Simmer for about 30-40 minutes, or until the rice and beans are tender and cooked through.

Remove the Scotch bonnet pepper and discard.
