  1. In a mixing bowl, combine semolina, all-purpose flour, baking soda, salt, and oil. Mix well.
  2. Gradually add water to the mixture and knead it into a stiff dough.
  3. Divide the dough into small portions and roll them into balls.
  4. Heat oil in a deep pan and fry the dough balls until golden brown and crispy.
  5. Remove the fried balls from the oil and let them cool.
  6. Make a small hole in each fried ball and fill it with boiled potatoes, boiled chickpeas, yogurt, green chutney, tamarind chutney, chopped onions, chopped tomatoes, chopped coriander leaves, chaat masala, red chili powder, roasted cumin powder, and black salt.
  7. Top it with sev and serve immediately.
